With 35 years’ experience in the dairy industry, I can help you and your team to improve your cheese knowledge, and to achieve far greater product consistency and customer satisfaction.
First employed in the dairy industry in 1975, I started to learn cheese grading in the mid nineteen-eighties when employed by Express Foods, which ultimately became The Cheese Company, and for whom I was the Cheese Grading Manager for thirteen years.
I was subsequently employed by the highly respected Farmhouse producer Belton Cheese at Whitchurch, and most recently by specialist supplier Dairygold Foods Ingredients at Crewe.
My experience includes grading and selecting to customers’ specific requirements and cheese Profiles for the Retail, Foodservice and Industrial sectors. I have led numerous benchmarking sessions assessing competitors’ products. Another very important facet of my work is selecting the most appropriate Cheddar flavour strength and style for use in ingredient applications.

I am a panel member of the “Retail Quality Assessments for Stilton Cheese” of the Stilton Cheesemakers’ Association.

I am an associate member of the Specialist Cheesemakers Association.

I have graded cheese across the UK, also in Ireland, Holland, Germany, Belgium, New Zealand and Canada, and have judged many times at major cheese competitions including:
